St David’s Day Leek and Potato Soup Recipe

Dydd Gŵyl Dewi Hapus, pawb! Today is St David’s Day here in Wales, which celebrates the Welsh patron, St David and is the national day of Wales.  There’s lots of ways the country celebrates this special day – from attending services with traditional dances and songs, holding Eisteddfod festival events and children usually dressing in traditional costumes of Welsh Ladies, waistcoats for boys or wearing the Welsh rugby shirt. To celebrate, I’ll be sharing with you my leek and potato soup recipe which is a pretty simple dish to serve on this patriotic day. It’s quick and easy, making it the perfect starter to a three course meal or just to have as a lone dish.

Ingredients

  • 2ibs of potato
  • 2 large leeks
  • 1 large carrot
  • 1 onion
  • 1 veggie stock cube
  • Salt
  • Pepper

 

  • Chop and wash your vegetables and add to saucepan.
  • Cover vegetables with water
  • Add your veggie stock cube
  • Add a pinch of salt and pepper
  • Bring your soup to boil
  • Simmer until vegetables are soft (aprox. 20 minutes)
  • Hand blend the soup down, leaving some chunks
  • Taste and adjust seasoning
  • Enjoy your leek and potato soup

Blogmas Day 5: Mushroom Wellington Recipe

Whether you’re catering for a vegetarian or just like the sound of it, Mushroom Wellington is perfect to serve with a Christmas dinner, so today I’ll be giving you my family’s recipe on how to make it.

Ingredients

  • 2 onions (approx. 1/2 lb or 250g)
  • 400g/just under 1Ib of mushrooms (any – we have used white)
  •  1lbs or 500g of store bought or homemade pastry (a good recipe for pastry can be found here if you choose to do homemade)
  • 125ml  of fresh cream
  • Brandy or white wine
  • 1/4 tsp of salt
  • 1/4 tsp of pepper
  • 2 cloves of garlic
  • Parsley
  • 1tbs of olive oil
  • 1tbs of milk

Quick doggy treats: Chicken Bites

If you’re unable to go to the shop or fancy trying something different for your furry friend, then this quick recipe is easy enough for you to make a tasty treat which your dogs will love!

Dog treats

Ingreedients 

  • 200g flour
  • 1 tablespoon of butter/flora/stork
  • Fresh chicken stock

Instructions

  1. Rub the flour and butter together to make crumbs
  2. Add chicken stock to mix
  3. Mix until dough
  4. Roll out dough
  5. cut shapes
  6. Cook in a medium temperature oven for about 10 minutes
  7. Leave to cool

Main Course: Vegetarian Spaghetti Bolognese

Last week, I posted my own recipe of carrot soup with cheese topped garlic bread which could be used for a starter of a 3 course meal. This week, I’ve decided to share my recipe of a vegetarian spaghetti bolognese sauce. I know a lot of people, who are also vegetarian such as myself, who aren’t sure on what to use as alternatives to meat, so I thought it could be useful to share what I use.

Ingredients

  • 1 small onion
  • 2 mushrooms
  • 1 jar of passata
  • A clove of garlic
  • 1 packet of fresh pasta
  • A pinch of dried basic
  • Olive Oil
  • 100g Quorn mince
  • 100g of Quorn Swedish Style Balls

Equipment

  • Chopping knife
  • Chopping board
  • Sauté pan
  • Saucepan
  • Spatula/wooden spoon

Winter Warmers- my recipe to make homemade carrot soup and cheese topped garlic bread

don’t really write about the fact that I enjoy cooking from time to time but after hearing that people weren’t sure how to make homemade soup, I decided to post my own recipe I’ve been making for a very long time. With my mother being a former cook for over a decade, we’ve always tended to bond while she showed me how to cook different meals. We ended up making our own recipe (which probably isn’t original, might I add) for carrot soup and it’s been something I enjoy making whilst she makes her own.

I’m not one to keep “secret recipes” and so I thought I would share it on my blog for people who are interested in learning how to cook basic meals who don’t know how. I’ve also added my recipe for cheese topped garlic bread which will be underneath the soup recipe. I apologise in advance for some of the photo qualities – I was cooking and taking photos at the same time and it’s something difficult to multitask!
